10-Minute Vegan Burrito Wraps

Quick, nutritious, and satisfying vegan burrito wraps bursting with flavor and plant-based protein, ready in just 10 minutes.

Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. Mash the ripe avocado in a medium-sized mixing bowl to your desired consistency.
  2. Stir in the freshly squeezed lime juice.
  3. Add the rinsed black beans, corn, chopped red onion, and cilantro to the bowl.
  4. Sprinkle cumin, chili powder, salt, and pepper over the mixture and fold together.
  5. Warm tortillas in a skillet for 15-20 seconds per side or microwave for 30-45 seconds.
  6. Lay a warm tortilla flat and spoon about a quarter of the filling onto the center. Roll the burrito by folding in the short edges and tucking tightly.
  7. Enjoy your burrito right away, either whole or sliced.

Notes

Serve with a salad, spicy salsa, or a dollop of dairy-free yogurt. Store leftovers in an airtight container for up to three days.
