Beef Burritos with Mexican Rice

Enjoy the vibrant flavors of Mexico with these hearty beef burritos filled with seasoned ground beef and fluffy Mexican rice.

Ingredients

  • 1 lb Ground beef
  • 1 can Black beans (rinsed and drained)
  • 1 Fresh cilantro (chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Lettuce (shredded)
  • 1 small Onion (chopped)
  • 1/2 cup Onion (chopped for the rice)
  • 1/2 tsp Dried oregano
  • 1 medium Tomato (diced)
  • 1/4 cup Beef broth
  • 1 3/4 cups Chicken broth
  • 1 cup Tomato sauce
  • 1 cup Long-grain white rice
  • 1/4 tsp Black pepper
  • 1 1/4 tsp Chili powder
  • 1/2 tsp Smoked paprika
  • 1 1/4 tsp Salt
  • 1 tbsp Olive oil
  • 2 tbsp Vegetable oil
  • 2 tsp Ground cumin
  • 4 large Flour tortillas (10-inch)
  • 1 cup Cheddar or Monterey Jack cheese (shredded)
  • 1/2 cup Sour cream

Instructions

  1. Start by heating the olive oil and vegetable oil in a large skillet over medium heat. Once hot, add the ground beef and cook until it’s browned, draining any excess fat.
  2. Toss in the chopped onion and minced garlic. Sauté until the onion turns translucent; this should take about 3-4 minutes.
  3. Stir in the black beans, tomato sauce, beef broth, chicken broth, white rice, oregano, cumin, chili powder, smoked paprika, salt, and black pepper. Mix well to combine all the flavors.
  4. Bring the mixture to a gentle boil. Once boiling, reduce the heat, cover, and let it simmer for about 20 minutes, or until the rice is tender and the liquid has mostly absorbed.
  5. After cooking, remove the skillet from heat and stir in the chopped cilantro and diced tomato for a fresh touch.
  6. To assemble your burritos, lay a tortilla flat on a clean surface. Add a portion of the beef and rice mixture, a handful of lettuce, a sprinkle of shredded cheese, and a dollop of sour cream.
  7. Carefully roll up the tortilla tightly, starting from one end and folding in the sides. Repeat this process with the remaining ingredients.
  8. Serve your burritos warm, accompanied by extra sour cream and toppings if you desire.
