Hearty Beef Soup

A comforting beef soup that warms the heart with rich flavors and fresh vegetables, perfect for family dinners.

Ingredients

  • 1 ½ pounds beef chuck, cut into bite-sized pieces
  • 4 cups beef broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • A splash of Worcestershire sauce
  • Optional: Fresh parsley for garnish

Instructions

  1. Heat a large pot over medium-high heat and add a splash of oil. Sear the beef on all sides until browned, about 5-7 minutes.
  2. Remove the beef and set aside. In the same pot, add onions, carrots, celery, and garlic. Sauté until onions are translucent, about 5 minutes.
  3. Return the beef to the pot and pour in the beef broth. Add potatoes, thyme, bay leaf, Worcestershire sauce, salt, and pepper. Stir well.
  4. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 90-120 minutes, until beef is tender.
  5. Adjust seasoning as necessary and remove bay leaf before serving.

Notes

Browning the beef adds depth of flavor. For a thicker consistency, mash some potatoes before serving. Optional: Add red wine or different vegetables for variation.
