Fluffy Buttermilk Pancakes

Delicious and fluffy buttermilk pancakes, perfect for breakfast or brunch!

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooking spray or additional butter for the pan

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl until well combined.
  2. Whisk together the buttermilk, egg, and melted butter in another bowl until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; it’s okay to have a few lumps in the batter.
  4. Heat a griddle or frying pan over medium heat and coat it with cooking spray or butter.
  5. Pour about 1/4 cup of batter for each pancake onto the hot pan.
  6. Cook until bubbles form on the surface and the edges look set, approximately 2-3 minutes.
  7. Flip the pancakes and cook for another 1-2 minutes until golden brown.
  8. Serve warm with syrup, butter, or your favorite toppings.

Notes

Don’t overmix the batter for the fluffiest pancakes! Keep heat moderate for even cooking.
