Best Ever One-Pot Lasagna Soup

A comforting and hearty lasagna soup combining all the classic flavors in a one-pot meal.

Ingredients

  • 1 lb Ground beef or Italian sausage (or plant-based alternative)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes
  • 1 can Tomato sauce
  • 4 cups Broth (beef or vegetable)
  • 8 oz Lasagna noodles, broken into pieces
  • 1 cup Ricotta cheese
  • 1 ½ cups Mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 tsp Italian seasoning
  • Fresh basil, for garnish
  • Olive oil, for cooking

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the ground meat, onion, and garlic; cook until the meat is browned and the onion is translucent.
  2. Stir in the diced tomatoes, tomato sauce, and broth. Add Italian seasoning and basil.
  3. Bring the mixture to a boil. Once boiling, add the broken lasagna noodles, reducing the heat to a simmer. Cook until the pasta is tender, about 10-12 minutes.
  4. Stir in the ricotta cheese and half of the mozzarella until melted and creamy.
  5. Serve hot, garnished with the remaining mozzarella and a sprinkle of fresh basil on top.

Notes

For a lighter option, substitute ground turkey or chicken. Use gluten-free pasta if needed.
