Ingredients
1 lb Ground beef or Italian sausage (or plant-based alternative)
1 Onion, diced
2 cloves Garlic, minced
1 can Diced tomatoes
1 can Tomato sauce
4 cups Broth (beef or vegetable)
8 oz Lasagna noodles, broken into pieces
1 cup Ricotta cheese
1 ½ cups Mozzarella cheese, shredded
½ cup Parmesan cheese, grated
2 tsp Italian seasoning
Fresh basil, for garnish
Olive oil, for cooking
Instructions
In a large pot, heat a splash of olive oil over medium heat. Add the ground meat, onion, and garlic; cook until the meat is browned and the onion is translucent.
Stir in the diced tomatoes, tomato sauce, and broth. Add Italian seasoning and basil.
Bring the mixture to a boil. Once boiling, add the broken lasagna noodles, reducing the heat to a simmer. Cook until the pasta is tender, about 10-12 minutes.
Stir in the ricotta cheese and half of the mozzarella until melted and creamy.
Serve hot, garnished with the remaining mozzarella and a sprinkle of fresh basil on top.
Notes
For a lighter option, substitute ground turkey or chicken. Use gluten-free pasta if needed.
