Black Beans and Rice with Sausage

A hearty and flavorful dish combining black beans, rice, and savory sausage, perfect for family dinners or meal prep.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 pound sausage (smoked or spicy), sliced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: cilantro, lime wedges, diced tomatoes

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Once the oil is shimmering, add diced onion and bell pepper. Sauté until soft and fragrant, about 5-6 minutes.
  3. Add minced garlic and cook for another minute until aromatic.
  4. Add sliced sausage, browning it slightly while stirring occasionally.
  5. Sprinkle in cumin and paprika, cooking for an additional 30 seconds.
  6. Add rice, black beans, and broth to the pot. Bring to a boil.
  7. Reduce heat to low, cover, and let simmer for about 20 minutes or until rice is tender.
  8. Fluff with a fork, add salt and pepper to taste, and enjoy the aromas!

Notes

Use quality sausage for better flavor. Consider adding toppings like fresh cilantro or lime.
