Creamy Blueberry Cheesecake Protein Energy Balls

These energy balls are a delightful treat that combines the rich flavors of cheesecake with a nutritious boost of protein, perfect for busy mornings or satisfying afternoon snacks.

Ingredients

  • 1 cup rolled oats
  • 1 cup creamy almond butter (or any nut butter of choice)
  • 1/2 cup vanilla protein powder
  • 1/2 cup fresh blueberries (or freeze-dried blueberries for added crunch)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats and vanilla protein powder.
  2. Add in the almond butter, honey or maple syrup, vanilla extract, and salt. Stir well until fully combined.
  3. Gently fold in the blueberries, taking care not to break them too much while mixing.
  4. Once everything is combined, use your hands to form the mixture into bite-sized balls—about the size of a tablespoon.
  5. Place the balls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes until they firm up.

Notes

Store any leftovers in an airtight container in the fridge for up to a week, or freeze for up to three months.
