Blueberry Cream Cheese Muffins

Delicious Blueberry Cream Cheese Muffins that blend the tart sweetness of blueberries with a rich cream cheese swirl.

Ingredients

  • 1 1/2 cups fresh blueberries
  • 1 Egg
  • 1 Egg yolk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 11/16 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter
  • 4 ounces cream cheese
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with liners.
  2. Cream the unsalted butter and granulated sugar together with the cream cheese until the mixture is smooth.
  3. Beat in the egg and the egg yolk until everything is well combined.
  4. Stir in the vanilla extract and milk, blending well.
  5. Whisk together your all-purpose flour, baking powder, and salt in a separate bowl.
  6. Gradually add your dry ingredients into the wet mixture, mixing until just combined.
  7. Gently fold in the fresh blueberries to maintain their lovely shape.
  8. Divide the batter evenly among the muffin cups, making sure not to overfill.
  9. Bake for 20-25 minutes or until a toothpick comes out clean when inserted into the center.
