Cajun White Chicken Chili

A comforting bowl of Cajun White Chicken Chili that combines zesty Cajun spices with tender chicken, hearty white beans, and shrimp for a delightful Southern twist.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1/2 pound andouille sausage, sliced
  • 1/2 pound shrimp, peeled and deveined
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn (frozen or canned)
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, sautéing until softened and fragrant.
  2. Incorporate the sliced andouille sausage and chicken breasts. Cook, stirring occasionally, until the chicken is browned on the outside.
  3. Stir in the Cajun seasoning, salt, and black pepper, coating the meat and onions with flavor.
  4. Pour in the chicken broth, followed by the white beans and corn, making sure everything is well combined.
  5. Bring the mixture to a boil, then reduce the heat, letting it simmer for 20-25 minutes until the chicken is thoroughly cooked.
  6. Remove the chicken, shred it, and return it to the pot to mix back in.
  7. Add the shrimp and cook for an additional 5-7 minutes until they turn pink and opaque.
  8. Serve hot, garnished with chopped fresh parsley.

Notes

For extra richness, sauté onion and garlic in a cast-iron pot. You can substitute with turkey, tofu, or add diced bell peppers for added texture.
