Southwest Ground Beef and Sweet Potato Skillet

A quick weeknight dinner packed with flavor and nutrition featuring ground beef, sweet potatoes, and colorful veggies.

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 cup corn (frozen or canned)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, sauté until softened, about 3-5 minutes.
  3. Stir in the ground beef, breaking it apart, and cook until browned, about 5-7 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Mix in the diced sweet potatoes, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Stir well.
  6. Cover and let cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
  7. Garnish with fresh cilantro before serving.

Notes

Feel free to swap out the ground beef for turkey or plant-based protein. Store leftovers in an airtight container; can be refrigerated for 3-4 days or frozen for up to 3 months.
