Cheesy Chicken Enchiladas

Delicious and comforting Chicken Enchiladas packed with tender chicken, green chilies, and topped with melty cheese.

Ingredients

  • 3 cups cooked chicken (shredded)
  • 1 can green chilies
  • 1 can tomatoes with green chilies
  • 1 packet taco seasoning
  • 8 pieces tortillas
  • 2 cups cheddar cheese (divided)
  • 1 cup sour cream
  • 16 oz Velveeta cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded cooked chicken, green chilies, tomatoes, taco seasoning, 1 cup of cheddar cheese, and sour cream in a large mixing bowl.
  3. Fill each tortilla with the chicken mixture, then roll them up tightly.
  4. Arrange the rolled tortillas side by side in a baking dish.
  5. Melt the Velveeta cheese in a saucepan over low heat until smooth, then pour it over the enchiladas evenly.
  6. Sprinkle the remaining cheddar cheese on top.
  7. Bake in the oven for 25-30 minutes or until bubbly and golden.
  8. Serve hot and enjoy!

Notes

Consider garnishing with fresh cilantro, sour cream, or avocado slices. Pair with rice and beans or a fresh salad.
