Cheesy Ground Beef & Potato Casserole

A hearty and comforting casserole made with ground beef, potatoes, and cheese, perfect for family gatherings and busy weeknights.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and ground beef. Cook until the beef is browned and the onion is softened.
  3. In a large bowl, combine the sliced potatoes, cooked beef mixture, cream of mushroom soup, milk, salt, and pepper. Mix well.
  4. Transfer the mixture into a greased baking dish.
  5. Top with shredded cheese.
  6. Cover the dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  8. Let it cool slightly before serving.

Notes

Feel free to switch out the cheese or use sweet potatoes for a twist on the classic flavor. Consider adding fresh chives or sour cream for serving.
