Chewy Christmas Cranberry Orange Cookies

Delightful chewy cookies filled with cranberries and zesty orange, perfect for the holiday season.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1 tablespoon orange zest
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the cranberries, orange zest, and nuts, if using.
  7. Drop tablespoonfuls of dough onto baking sheets lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To maintain freshness, store in an airtight container. Can also freeze pre-scooped dough.
