Homemade Chicken Pot Pie

A warm and comforting Chicken Pot Pie filled with shredded chicken and mixed vegetables in a creamy sauce, topped with a flaky crust. Perfect for family dinners and gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (like carrots, peas, and corn)
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 pie crust

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large saucepan, combine shredded chicken, mixed vegetables, flour, chicken broth, milk, onion powder, garlic powder, salt, black pepper, and thyme.
  3. Cook over medium heat, stirring often, until the mixture thickens and starts to bubble.
  4. Pour the creamy mixture into a pie dish.
  5. Cover with a pie crust. Cut slits in the top to let steam escape.
  6. Bake for 30 to 35 minutes or until the crust is golden brown.
  7. Allow to cool for a few minutes before serving.

Notes

For a golden crust, brush the top with an egg wash before baking. Let the pie cool for about 10 minutes after baking to help the filling set.
