Chicken & Quinoa Dinner Bowl

A wholesome, vibrant combination of protein-packed chicken, nutty quinoa, and fresh vegetables, perfect for a nourishing meal any day of the week.

Ingredients

  • 1 ½ lbs skinless boneless chicken breast
  • 1 cup canned black beans, rinsed
  • 1 cup cherry tomatoes, halved
  • 6 tbsp fresh coriander (cilantro)
  • 1 cup fresh or frozen corn
  • 2 cups mixed greens (spinach, kale, or arugula)
  • Juice and zest of about 2 limes (about 1/3 cup)
  • 1 tbsp honey
  • 2 cups quinoa
  • 1 tbsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tsp cumin

Instructions

  1. Start by cooking the quinoa according to the package instructions.
  2. Season the chicken breasts with salt, pepper, and chili powder.
  3. Heat the olive oil in a skillet over medium heat and cook the seasoned chicken for about 6-7 minutes on each side.
  4. Combine the black beans, cherry tomatoes, corn, greens, lime juice, lime zest, honey, coriander, and cumin in a mixing bowl.
  5. Slice the cooked chicken into strips and serve it over a bed of quinoa.
  6. Top the dish with the black bean and corn mixture for added flavor.
  7. Drizzle with extra lime juice if desired.

Notes

For added crunch, consider topping with crushed tortilla chips. Perfect for meal prep and keeps well in the fridge.
