Chicken and Turkey Soup

A comforting bowl of Chicken and Turkey Soup, perfect for chilly days, packed with protein and vegetables for a hearty meal.

Ingredients

  • Boneless chicken breast or thighs
  • Turkey (leftover or fresh)
  • Carrots
  • Celery
  • Onion
  • Garlic
  • Chicken broth (or vegetable broth)
  • Herbs (thym and parsley)
  • Salt and pepper to taste
  • Optional: noodles or rice

Instructions

  1. Heat a splash of oil in a large pot over medium heat.
  2. Sauté the diced onions, carrots, and celery until softened, about 5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in the chicken and turkey, cooking until just browned.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Season with thyme, salt, and pepper. Let simmer for 20-30 minutes.
  7. If using, add noodles or rice and cook until tender according to package instructions.
  8. Remove from heat, stir in fresh parsley, and adjust seasoning as desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to three months. Reheat thoroughly before serving.
