Homemade Chicken Soup

A comforting bowl of homemade chicken soup loaded with tender chicken, vibrant vegetables, and flavorful herbs, perfect for chilly days.

Ingredients

  • 2 cups shredded chicken (rotisserie chicken works great)
  • 1 cup carrots
  • 1 cup celery
  • 1 cup onions
  • 1 cup ditalini pasta
  • 4 cups chicken broth (homemade or store-bought)
  • Fresh thyme and parsley
  • Salt and pepper to taste

Instructions

  1. Heat a splash of oil in a large pot over medium heat. Add diced onions, carrots, and celery, and sauté until tender, about 5-7 minutes.
  2. Incorporate shredded chicken and pour in chicken broth. Bring to a gentle simmer.
  3. Stir in ditalini pasta and cook for 8-10 minutes until al dente.
  4. Add fresh herbs and season with salt and pepper. Serve warm and enjoy!

Notes

For a creamier soup, consider adding a splash of cream. You can substitute vegetables based on what you have at home.
