Chipotle Copycat Corn Salsa

A vibrant and zesty corn salsa inspired by Chipotle, perfect for tacos, burritos, or as a standalone dip.

Ingredients

  • 1 lb frozen corn, thawed
  • 1/3 cup cilantro, chopped
  • 1 jalapeño pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1 tsp salt

Instructions

  1. Prepare your vegetables: chop the red onion, dice the jalapeño, and finely chop the cilantro.
  2. Combine the thawed corn, red onion, jalapeño, and cilantro in a large bowl.
  3. Add the lemon juice, lime juice, and salt to the bowl.
  4. Toss everything gently until combined, ensuring even distribution of ingredients.
  5. Taste and adjust seasoning if needed. Serve immediately or let it sit for 30 minutes to enhance the flavors.
