Delightful cinnamon roll cookies that merge the flavors of classic cinnamon rolls with the simplicity of cookies, ideal for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon until well combined.
  3. Cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture.
  6. For the filling, combine brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough on parchment, sprinkle with the filling, and roll into a log.
  8. Slice the rolled dough into rounds and place on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are golden brown.

Notes

For best results, ensure your butter is at room temperature. You can add nuts or raisins for extra flavor.
