Classic Chicken Tortilla Soup

A comforting and hearty chicken tortilla soup filled with tender chicken, zesty spices, and vibrant toppings.

Ingredients

  • 2 cups cooked chicken
  • 1 avocado
  • 1 can black beans
  • 1 can corn
  • 1 teaspoon garlic powder
  • 1 can Rotel diced tomatoes with green chilies
  • 1 can tomatoes
  • 1/2 medium yellow onion
  • 1 cup chicken broth
  • 1/2 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Tortilla strips
  • 1 cup heavy cream or whipping cream
  • Sour cream
  • Tex-Mex style shredded cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the garlic powder, chili powder, and smoked paprika; cook for an additional minute.
  4. Add the cooked chicken, black beans, corn, diced tomatoes, and chicken broth; bring to a boil.
  5. Reduce the heat and let it simmer for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with tortilla strips, avocado, heavy cream, sour cream, and shredded cheese.

Notes

For a quicker meal, use rotisserie chicken. Add fresh cilantro and lime juice for extra flavor.
