Classic Ginger Garlic Chicken Noodle Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger; sauté until the onion becomes translucent and fragrant.
  2. Pour in the chicken broth and bring to a boil, allowing the flavors to meld together.
  3. Add the sliced carrots and celery, simmering for about 5 minutes until softened.
  4. Stir in the shredded chicken and egg noodles, cooking until the noodles are tender.
  5. Season the soup with salt and pepper to taste.
  6. Before serving, sprinkle fresh parsley on top.
