Ginger Garlic Chicken Noodle Soup

A comforting ginger garlic chicken noodle soup that brings warmth and nourishment in one bowl, perfect for chilly evenings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup noodles (egg noodles or rice noodles)
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, heat a drizzle of oil over medium heat. Add the minced ginger and garlic, sautéing for about 1 minute until fragrant.
  2. Toss in the sliced carrots and celery, cooking for another 3-4 minutes until they soften slightly.
  3. Pour in the chicken broth and bring it to a gentle boil.
  4. Add the noodles of your choice and cook according to the package instructions until they’re tender.
  5. Stir in the shredded chicken and soy sauce, seasoning with salt and pepper to taste.
  6. Serve hot, garnished with a sprinkle of green onions.

Notes

Feel free to swap out the veggies or use leftover chicken for easier prep. For a richer broth, use homemade chicken stock if available.
