Zuppa Toscana

A comforting and hearty Italian soup featuring Italian sausage, potatoes, and kale, perfect for chilly evenings.

Ingredients

  • 1 lb Italian sausage
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 large potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In your crockpot, brown the Italian sausage, onions, and garlic together.
  2. Pour in the chicken broth and add the diced potatoes, stirring to combine.
  3. Cover and cook on low for 6-8 hours, or on high for 4 hours.
  4. About 30 minutes before serving, add the chopped kale and pour in the heavy cream.
  5. Season with salt and pepper to taste and serve hot, topped with freshly grated Parmesan cheese.

Notes

For a lighter version, swap the Italian sausage for turkey sausage or a plant-based option. Feel free to adjust the creaminess with your choice of dairy or non-dairy milk.
