Comforting Lentil and Sausage Soup

A hearty and nutritious lentil and sausage soup packed with vibrant vegetables and rich flavors, perfect for chilly days.

Ingredients

  • 1 cup lentils, rinsed
  • 1 lb sausage (Italian or your choice), sliced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned. Once cooked, remove the sausage and set aside.
  2. Using the same pot, toss in the chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Add the minced garlic and continue to cook for another minute.
  4. Stir in the rinsed lentils, broth, diced tomatoes, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and let simmer for 25-30 minutes, or until lentils are tender.
  6. Return the cooked sausage to the pot and heat everything through.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a creamier texture, blend a portion of the soup and stir it back. This soup freezes well for up to 3 months.
