Copycat Chipotle Chili Corn Salsa

A vibrant and fresh salsa that combines sweet and spicy flavors, perfect for tacos, burritos, or as a dip.

Ingredients

  • 1 can of corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Combine all the ingredients in a large bowl: corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. Squeeze the juice of one lime over the mixture and sprinkle in salt to taste.
  3. Stir the ingredients together until well mixed.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For best flavor, let the salsa chill for a couple of hours. Feel free to adjust ingredients to suit your taste.
