Coriander Lime Chicken with Rice

A refreshing dish that balances savory and zesty flavors, perfect for weeknight dinners or casual get-togethers.

Ingredients

  • 2 large Chicken breasts
  • 3 tbsp Coriander
  • 1 1/2 cups Corn (frozen or canned fresh kernels)
  • 1 clove Garlic, minced
  • 1/2 tsp Garlic powder
  • 1 Lime, zested and juiced
  • 1/4 cup Red onion, diced
  • 1 tbsp Mayonnaise
  • 2 cups Cooked white Rice
  • 1 tsp Chili powder
  • 2 tbsp Olive oil or avocado oil
  • 1 tsp Smoked paprika
  • Salt and pepper to taste
  • 1/2 cup Plain Greek yogurt

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, chili powder, and smoked paprika.
  3. Cook the chicken for 5-7 minutes on each side until it’s fully cooked. Once finished, remove from heat and let it rest.
  4. Combine corn, diced red onion, minced garlic, lime juice, lime zest, coriander, and mayonnaise in a bowl to create the corn topping.
  5. Slice the cooked chicken and serve it over hot, cooked rice. Top with the fresh corn mixture and a dollop of Greek yogurt.

Notes

Let the chicken rest after cooking for the best flavor. Adjust spice levels according to taste, and use fresh limes for enhanced flavor.
