Cottage Cheese Flagels

Soft, cheesy, and quick to make, these flat bagel-like buns are a protein-packed alternative to traditional rolls, perfect for breakfasts and brunches.

Ingredients

  • 2 cups Baby spinach (chopped)
  • 1 large Egg
  • 1 cup All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 tbsp Olive oil (plus extra for brushing)
  • 1 cup Cottage cheese
  • 1 cup Mozzarella cheese (shredded)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, mozzarella cheese, and egg. Stir until the mixture is reasonably smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined to form a soft dough.
  5. Fold in the baby spinach so it’s evenly distributed.
  6. Divide the dough and shape into bagel forms or flatten into rounds. Place them on the baking sheet.
  7. Brush the tops with olive oil.
  8. Bake for 20–25 minutes until puffed and golden on top.
  9. Allow to cool slightly before serving.

Notes

For a tangier bite, swap half the cottage cheese for ricotta. To make gluten-free, use a 1:1 gluten-free baking flour, but expect a slightly different texture.
