Chicken Tortilla Soup

A warm, comforting soup featuring shredded chicken and zesty flavors, perfect for any occasion.

Ingredients

  • 1 lb cooked chicken, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Start by heating a large pot over medium heat. Add the chopped onion, minced garlic, and diced bell pepper. Sauté until softened, about 5 minutes.
  2. Toss in the shredded chicken and diced tomatoes. Then, pour in the chicken broth and add the rinsed and drained black beans and corn.
  3. Season with cumin, chili powder, salt, and pepper. Bring everything to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Serve hot, garnished generously with tortilla chips, fresh cilantro, and lime wedges to squeeze over the top.

Notes

Use rotisserie chicken to save time or swap in your favorite veggies. Roasting veggies before adding can enhance flavors.
