Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries, chopped
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the melted butter, fresh orange juice, orange zest, and eggs. Whisk until smooth.
  4. Gradually combine the wet and dry ingredients, mixing until just incorporated.
  5. Gently fold in the chopped cranberries.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for a few minutes before transferring to a wire rack to cool completely.
