Creamy Benedictine Cucumber Tea Sandwiches

Delightful bite-sized cucumber sandwiches with a creamy herb filling, perfect for brunch or afternoon tea.

Ingredients

  • 8 oz Cream cheese, softened
  • 2 tbsp Mayonnaise
  • 1 tsp fresh Lemon juice
  • 1 tbsp fresh Dill, chopped
  • 1 Green onion, chopped
  • 1 Large or 2 medium English cucumbers, grated
  • Salt and pepper to taste
  • 8 slices soft White bread

Instructions

  1. Combine the softened cream cheese, mayonnaise, fresh lemon juice, chopped dill, chopped green onion, and grated cucumber in a mixing bowl. Blend until smooth and creamy.
  2. Add salt and pepper to adjust the seasoning to your taste.
  3. Spread the creamy mixture evenly over four slices of the soft white bread.
  4. Top each slice with a remaining slice of bread to create sandwiches.
  5. Cut the sandwiches into quarters or your desired shapes for easy serving.
  6. Serve immediately or refrigerate until ready to enjoy.

Notes
