Creamy Corn Salsa

Ingredients

  • 1/2 cup Cilantro, chopped
  • 2 (15.5 oz) cans Fiesta corn, drained
  • 1/2 tsp Garlic powder
  • 1 cup Red onion, diced
  • 1/2 cup Mayonnaise
  • 1/2 tsp Salt
  • 1 tsp Cumin
  • 2 cups Cheese, shredded (mix of cheddar and Monterey Jack)
  • 1 cup Sour cream

Instructions

  1. Start with a large bowl and combine the diced red onion and chopped cilantro.
  2. Drain the Fiesta corn and toss it into the bowl.
  3. Add the garlic powder, cumin, salt, mayonnaise, and sour cream.
  4. Mix everything together until all ingredients are well combined.
  5. Gently fold in the shredded cheese.
  6. Chill and serve!

Notes

For extra crunch, add diced bell peppers or jalapeƱos. Squeeze some lime juice for freshness. Allow the salsa to sit an hour in the fridge before serving to meld the flavors.
