Creamy Dill Pickle Hummus

A delightful twist on traditional hummus with the tanginess of dill pickles, perfect for snacking or gatherings.

Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup dill pickle juice
  • 1 cup dill pickles, chopped
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the chickpeas, tahini, dill pickle juice, chopped dill pickles, and minced garlic.
  2. Blend until smooth, scraping down the sides as necessary.
  3. While the machine is running, slowly add the olive oil until fully incorporated and creamy.
  4. Taste your hummus, then season with salt and pepper to your liking.
  5. If it’s too thick, add an extra splash of pickle juice or a little water until you reach the desired consistency.
  6. Transfer to a serving bowl and optionally garnish with more chopped pickles or fresh dill.

Notes

For a creamier texture, peel the chickpeas before blending. Try adding different types of pickles for variations.
