Creamy Mexican Street Corn in a Cup (Esquites)

Ingredients

  • 4 cups corn (fresh or frozen kernels)
  • 1 garlic clove
  • 1 jalapeño
  • 2 tbsp lime juice
  • 3 tbsp mayonnaise
  • 1 tsp chili powder
  • 1 tsp salt
  • 3 tbsp butter
  • 1/2 cup Cotija cheese
  • 1/2 cup Mexican crema or sour cream
  • Fresh cilantro for garnish

Instructions

  1. Cook the corn until tender, either by boiling or grilling until slightly charred.
  2. Melt the butter in a skillet over medium heat.
  3. Add the corn and sauté for a few minutes until heated through.
  4. Chop the jalapeño and garlic finely.
  5. Combine the sautéed corn with chopped jalapeño, garlic, mayonnaise, lime juice, chili powder, and salt in a mixing bowl.
  6. Fold in the crumbled Cotija cheese and Mexican crema until well integrated.
  7. Garnish with fresh cilantro before serving. Scoop into cups and enjoy!

Notes

Serve topped with extra Cotija cheese, a sprinkle of chili powder, and a wedge of lime. Pair with tortilla chips for added crunch.
