Ingredients

  • 12 large mushrooms
  • 1 cup creamy garlic and herb cheese (e.g., Boursin)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh herbs (e.g., parsley, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms and gently remove the stems.
  3. In a bowl, combine the creamy garlic and herb cheese with salt, pepper, and freshly chopped herbs.
  4. Fill each mushroom cap generously with the cheese mixture.
  5. In another bowl, mix together panko breadcrumbs, grated parmesan cheese, and olive oil until well combined.
  6. Sprinkle the breadcrumb mixture generously on top of each stuffed mushroom cap.
  7. Place the mushrooms on a baking sheet and roast them for 15-20 minutes or until tender and the topping is golden brown.
