Creamy Low Carb Chicken Casserole

A delicious and comforting low carb chicken casserole that’s quick to prepare and loaded with flavor, making it perfect for busy weeknights or family gatherings.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, broccoli, cauliflower, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  3. Transfer the mixture to a greased casserole dish, spreading it out evenly.
  4. Sprinkle shredded cheddar cheese generously on top.
  5. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  6. Allow it to cool for a few minutes before serving.

Notes

For spicier flavors, consider adding jalapeños or crushed red pepper flakes. This casserole can be made ahead of time and is suitable for freezing.
