A delightful dish featuring tender chicken, creamy sauce, and savory sun-dried tomatoes, perfect for date nights and special occasions.

Ingredients

  • 4 Chicken breasts
  • 3 cloves Garlic, minced
  • 1 Onion, chopped
  • 1/2 cup Sun-dried tomatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Red pepper flakes
  • 1/4 cup Almond flour (optional for keto)
  • Olive oil for cooking
  • Pasta, mashed potatoes, rice, or roasted vegetables (for serving)

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in almond flour if using.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken, searing until golden brown on both sides. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add garlic and onion, sautéing until fragrant.
  5. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  6. Add Parmesan cheese and cream, stirring until combined.
  7. Return the chicken to the skillet, cover, and let it simmer until cooked through.
  8. Serve with your choice of pasta, mashed potatoes, rice, or roasted vegetables.

Notes

For extra flavor, marinate the chicken beforehand and consider adding spinach or roasted red peppers for variety.
