Creamy Spinach Pasta

A delightful blend of fresh spinach and pasta in a creamy, cheesy sauce, perfect for weeknight meals.

Ingredients

  • Fresh palak (spinach) puree
  • Milk
  • Wheat flour
  • Mozzarella cheese
  • Salt
  • Pepper
  • Olive oil or butter
  • Garlic (optional)
  • Pasta of your choice (spaghetti, fettuccine, or whole grain!)

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and set aside.
  2. In a pan, heat olive oil or butter over medium heat; add garlic if using and sauté until fragrant.
  3. Pour in the fresh palak puree and cook for a few minutes until warmed through.
  4. Stir in the milk and bring to a gentle simmer.
  5. Gradually sprinkle in the wheat flour, stirring continuously to thicken the sauce.
  6. Mix in the mozzarella cheese until melted and smooth.
  7. Season the sauce with salt and pepper to taste.
  8. Toss the cooked pasta in the creamy spinach sauce until coated. Serve hot and enjoy!

Notes

For a dairy-free version, substitute milk with a plant-based alternative and use vegan cheese. To reheat, add a splash of milk if sauce thickens.
