Creamy Taco Soup

A warm and comforting bowl of creamy taco soup combining the flavors of tacos with the richness of a cozy soup, perfect for chilly evenings or busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 can beans (black or pinto)
  • 1 can corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Toppings: shredded cheese, sour cream, tortilla strips

Instructions

  1. Brown the ground beef in a large pot over medium heat, then drain excess fat.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Stir in the beans, corn, taco seasoning, and broth; bring to a rolling boil.
  4. Lower heat and simmer for 15-20 minutes to deepen flavors.
  5. Stir in the heavy cream, seasoning with salt and pepper to taste.
  6. Ladle into bowls and top with your favorites like shredded cheese, sour cream, and crunchy tortilla strips.

Notes

For a twist, sauté spices before adding other ingredients or stir in cream cheese for extra creaminess. You can also use ground turkey or a meat alternative if preferred.
