Creamy Taco Soup

A comforting and hearty soup loaded with protein-rich ingredients and creamy texture, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 can beans (black or pinto)
  • 1 can corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, cilantro

Instructions

  1. In a large pot, brown the ground beef over medium heat until it’s no longer pink.
  2. Add the chopped onion and minced garlic, cooking until the onion becomes soft and translucent.
  3. Stir in the beans, corn, beef broth, and taco seasoning. Mix thoroughly.
  4. Bring the mixture to a simmer and let it cook for about 15 minutes, allowing the flavors to meld together beautifully.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Serve hot topped with shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.

Notes

For added depth, consider sautéing some bell peppers or corn before adding the other ingredients. This soup also freezes well for up to 3 months.
