Creamy White Chicken Chili

A rich and creamy chili that’s cozy and easy to prepare in a slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14 oz) chicken broth
  • 1 cup cream cheese
  • 1 small onion, diced
  • 1 can (4 oz) green chilies, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, cilantro, sour cream

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker.
  2. Add the white beans, chicken broth, diced onion, and green chilies.
  3. Sprinkle with garlic powder, cumin, chili powder, and season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked.
  5. Remove the chicken and shred it with two forks before returning it to the pot.
  6. Stir in the cream cheese until melted and the chili is creamy. Serve hot with optional toppings.

Notes

For a vegetarian version, swap chicken for beans. Try adding chipotle peppers for a smoky kick.
