Baja Fish Tacos

Fresh, flavorful Baja fish tacos with crispy fish, citrus slaw, and creamy avocado.

Ingredients

  • 1 lb white fish fillets (e.g., cod, tilapia)
  • 1 cup all-purpose flour
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cornmeal
  • Oil for frying
  • 8 small corn tortillas
  • 1 cup citrus slaw (cabbage, cilantro, lime juice)
  • 1 avocado, sliced
  • 1/2 cup spicy chipotle mayo

Instructions

  1. Combine the flour, chili powder, cumin, salt, and black pepper in a shallow bowl.
  2. Dredge the fish fillets in this flour mixture until well-coated.
  3. Heat oil in a pan over medium-high heat.
  4. Fry the fish for about 3-4 minutes on each side until golden and cooked through.
  5. Warm the corn tortillas in a separate pan.
  6. Assemble the tacos by placing crispy fish on the tortillas, topping with citrus slaw, sliced avocado, and chipotle mayo.
  7. Serve immediately for the best flavor.

Notes

For extra freshness, serve with lime wedges, and consider pairing with mango salsa or black bean salad.
