Crispy Black Bean Tacos

Delightful black bean tacos with a satisfying crunch, perfect for casual dinners or meal prep.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup pepper jack cheese, shredded
  • Cooking spray or oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mash the black beans with the cumin, garlic powder, salt, and pepper until smooth.
  3. Take a small amount of the black bean mixture and place it onto each tortilla. Top with a sprinkle of pepper jack cheese and fold the tortillas in half.
  4. Arrange the folded tacos on a baking sheet, then spray or brush them lightly with oil.
  5. Bake in the oven for 15-20 minutes, or until they are crispy and golden-brown.
  6. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for best texture.
