Crock Pot Creamy Chicken Parmesan Soup

A delightful twist on classic comfort food, this rich and creamy soup brings all the flavors of Chicken Parmesan into a warm, hearty dish perfect for cozy nights.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Place the chicken breasts in the Crock Pot.
  2. Pour in the diced tomatoes, chicken broth, and heavy cream.
  3. Add the minced garlic, Italian seasoning, salt, and pepper.
  4. Stir to mix all the ingredients well.
  5. Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the chicken is tender and fully cooked.
  6. Remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the pot and stir in the grated Parmesan cheese, allowing it to melt into the soup.
  8. Serve hot, topped with fresh basil for that perfect finishing touch.
