Crockpot Cheesy Potatoes and Kielbasa

A comforting and effortless crockpot dish featuring cheesy potatoes and savory kielbasa, perfect for busy weeknights or gatherings.

Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1 lb kielbasa, sliced
  • 1 cup shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • Salt and pepper to taste
  • Optional: chopped green onions or chives for garnish

Instructions

  1. In a large bowl, mix together the cream of mushroom soup, sour cream, and milk until well combined.
  2. Layer the cubed potatoes and sliced kielbasa in the crockpot.
  3. Pour the soup mixture over the top.
  4. Season with salt and pepper to taste.
  5. Cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
  6. About 30 minutes before serving, stir in the cheddar cheese and let it melt.
  7. Serve warm, garnished with chopped green onions or chives, if desired.

Notes

Feel free to switch out kielbasa for turkey sausage or omit it for a vegetarian option. Serve with a fresh salad or with garlic bread.
