Crockpot White Chicken Chili with Cream Cheese

A warm and creamy white chicken chili that’s easy to prepare in a crockpot, perfect for busy weeknights.

Ingredients

  • Shredded boneless skinless chicken breasts
  • Corn (canned or frozen)
  • Black beans (drained and rinsed)
  • Diced tomatoes
  • Cream cheese
  • Chicken broth
  • Chili powder
  • Cumin
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Instructions

  1. In a crockpot, combine the shredded chicken, corn, black beans, and diced tomatoes.
  2. Add the cream cheese and pour in the chicken broth.
  3. Sprinkle in your seasonings: chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  4. Give everything a good stir to ensure it’s well combined.
  5. Cover and let it cook on low for 6-8 hours, or switch it to high for 3-4 hours.
  6. Once it’s done, stir well before serving to mix in the cream cheese completely.
  7. Serve hot and enjoy the flavorful goodness!

Notes

Topping with fresh cilantro, avocado, or lime can enhance the flavor. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
