Crockpot White Chicken Chili

A creamy, comforting white chicken chili made with shredded chicken, white beans, and green chiles, perfect for busy weeknights.

Ingredients

  • 2 cups shredded chicken (cooked)
  • 2 cans white beans, drained and rinsed
  • 1 can diced green chiles
  • 1 cup chicken broth
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Place the shredded chicken into your crockpot.
  2. Add the drained white beans and diced green chiles on top.
  3. Pour in the chicken broth and stir to combine everything evenly.
  4. Cover your crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  5. When it’s time to serve, stir in the Monterey Jack cheese until it melts into a creamy delight.

Notes

Feel free to substitute shredded turkey or vegetable broth for a lighter version. Use rotisserie chicken for added flavor.
