A comforting and quick soup featuring savory broth, tender dumplings, and vibrant greens, perfect for busy weeknights.

Ingredients

  • Dumplings (frozen or homemade)
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 cup sliced mushrooms
  • 2 cups chopped spinach or bok choy
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Green onions, sliced (for garnish)
  • Sesame oil (optional)

Instructions

  1. Bring the chicken or vegetable broth and water to a gentle simmer in a large pot.
  2. Add minced garlic, grated ginger, and soy sauce into the mix.
  3. Stir in sliced mushrooms and cook for about five minutes until softened.
  4. Introduce dumplings and cook according to package instructions (typically about 5-7 minutes if frozen).
  5. Add chopped greens and cook for another 1-2 minutes until wilted.
  6. Remove from heat and drizzle sesame oil if desired.
  7. Serve hot, garnished with sliced green onions.

Notes
