Easy Baked Boneless Skinless Chicken Thighs

A quick and flavorful recipe for juicy baked chicken thighs, perfect for busy weeknights.

Ingredients

  • 2 pounds boneless skinless chicken thighs (about 8 pieces)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Instructions

  1. Remove the chicken from the refrigerator about 20 minutes before cooking to let it come to room temperature.
  2. Use paper towels to pat the chicken completely dry.
  3. Season both sides with kosher salt and let it rest for about 2 minutes. Sprinkle garlic powder, smoked paprika, and onion powder over each thigh.
  4. Preheat your oven to 400°F (200°C) with the rack positioned in the center.
  5. Brush a baking sheet with 1 tablespoon of olive oil to prevent sticking.
  6. Arrange the chicken thighs on the baking sheet and drizzle with the remaining olive oil.
  7. Bake for 18 minutes, flip the thighs, then bake for an additional 14 minutes.
  8. Check that the internal temperature reaches 175°F at the thickest part of the thighs.
  9. Tent the chicken with foil and let it rest for 3 minutes before serving.
