Easy Cheesy Ground Beef Enchiladas

Comforting and quick-to-make enchiladas filled with seasoned ground beef and drenched in cheese, perfect for busy weeknights.

Ingredients

  • 1 lb Ground beef, lean
  • 2 cloves Garlic, minced
  • 1 Onion, medium, chopped
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 8 Flour or corn tortillas
  • 1 cup Cheddar or Monterey Jack cheese, shredded
  • 2 cups Enchilada sauce, store-bought or homemade
  • Sour cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef with the chopped onion and minced garlic until browned; drain excess fat.
  3. Stir in the chili powder and cumin, cooking for another minute until fragrant.
  4. Spread a thin layer of enchilada sauce in a baking dish.
  5. Fill each tortilla with the beef mixture, roll them up, and place seam side down in the dish.
  6. Pour the remaining enchilada sauce over the tortillas.
  7. Sprinkle the shredded cheese evenly over the top.
  8. Bake for about 20-25 minutes until cheese is melted and bubbly.
  9. Serve hot, topped with sour cream.
