Easy Crock Pot Cheesy Potato Soup

A cozy and creamy potato soup made effortlessly in a slow cooker, perfect for chilly nights.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese (extra for toppings, if desired)
  • 1 cup milk
  • 1/2 cup cream
  • Salt and pepper to taste
  • Optional toppings: bacon bits, green onions, or more cheese

Instructions

  1. Combine the diced potatoes and onions in your slow cooker.
  2. Pour in the broth and season with salt and pepper.
  3. Cover and cook on low for about 6-8 hours or high for 3-4 hours until the potatoes are tender.
  4. Mash some of the potatoes with a fork to achieve a thicker consistency.
  5. Stir in the milk and cream, then add the cheese.
  6. Let it cook for another 30 minutes on high until everything is heated through and the cheese is melted.
  7. Serve hot and top with your choice of bacon bits, green onions, or extra cheese.
